Simmer choke for alcohol burner

    Hi,
    My Abu Roken smoker shown here works well with my Turm 144, however I like to use the Turm for making coffee while the fish smokes in the cooker. The Abu Roken came with its own 'burner' - basically an empty polish tin.

    The problem with this 'burner' is it runs too hot for fish smoking, and doesn't contain enough fuel to cook through a fat fillet. So I made a choke for the burner using shaped and pop riveted aluminium scrap sheet.

    It works well from full flame to low simmer and then snuff.

    So now I use two burners choked down and running side by side to smoke long fillets.

    Simple, effective. I have a Starlyte stove that uses a ring on top to reduce the exposed top of the stove, basically what you are doing, but you have more adjustability.
