used correctly a peculator doesnt really boil the coffee. A small amount does boil under the center which drives the whole thing but most of the coffee remains below boiling. Its a fine line though between that and boiling the lot. How much though of how we like coffee is fashion. I read an instruction book given to single railway workers in NZ that suggested that although tea was the preferred drink that some people might prefer coffee. The recipe called for whole beans in the pot and boiled for 10 minutes with a little salt. This was from the 1930s
