For tramping (hiking) my favorite stoves are probably either a Trangia T27 or T28. Non classic the Caldera Cone stove in titanium is hard to beat. Though sometimes I just want the efficiency of my Primus Eta Lite. I have approximately 9 modern stoves of various types and i like to rotate them in use on trips. For car camping, my go to is well what ever stove I decide to take: from a Trangia T25 to a modern gassie to a 1 pint Kero stove such as my Shinabro 340 or a more historic gassie such as a Primus 2222. I haven't used my 111 much yet and to be honest, of the cased kero stoves I have, I probably prefer my Radius 43E. I have some maybe desirable stoves but like Ziradog said, I see new ones every week here that I would love to have if I had unlimited time/money.
Personally, Brit No.12 & Trangia 27. Being a Francophile I also have a bit of a 'thing' for the French Army 7052, even though by all accounts it's a dog, I still haven't found one. I also have a curious fondness for the Russian Schmel-4. None rare or unusual, just the ones I like.
